Ingredients

  • 12 oz white fish fillets (cod, tilapia, or snapper)
  • 2 tbsp fresh ginger, julienned
  • 3 scallions, cut into 2-inch strips
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp Shaoxing wine(optional)
  • 1/2 tsp sugar(optional)
  • small handful cilantro(optional)

Instructions

  1. 1

Pat the fish fillets dry and place them in a shallow heatproof dish that fits inside your steamer. Rub with Shaoxing wine if using.

  2. 2

Scatter half the ginger and half the scallions over the fish.

  3. 3

Bring water in your steamer to a boil, then place the dish inside, cover, and steam for 10-12 minutes until the fish flakes easily with a fork.

  4. 4

Remove the dish, drain any accumulated liquid, and top the fish with the remaining ginger, scallions, and cilantro if using.

  5. 5

Mix soy sauce with sugar and pour over the fish.

  6. 6

Heat the vegetable oil in a small pan until smoking, then carefully pour the hot oil over the ginger and scallions. Serve immediately with steamed rice.
