Ingredients

  • 1.5 lbs Pork spare ribs
  • 2 tbsp Fermented black beans (douchi)
  • 4 cloves Garlic
  • 1 Fresh red chili(optional)
  • 2 tbsp Soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp grated Ginger
  • 1 tbsp Cornstarch
  • 1 tsp Sugar substitute (erythritol)
  • 2 Green onions
  • 1 tbsp Neutral oil

Instructions

  1. 1

Soak ribs in cold water for 20 minutes, then drain and pat dry. Cut into 2-inch pieces between the bones.

  2. 2

Rinse fermented black beans and mash with garlic, ginger, and chopped chili. Heat oil in a small pan and fry the mixture for 1 minute until fragrant.

  3. 3

Toss ribs with the black bean mixture, soy sauce, Shaoxing wine, cornstarch, and sugar substitute. Marinate 30 minutes total (overlaps with prep).

Arrange ribs in a single layer in a heatproof dish. Place in a steamer over boiling water, cover, and steam over medium-high heat for 60 minutes, adding hot water to the steamer as needed.

  5. 5

Garnish with sliced green onions and serve immediately.
