Ingredients

  • 3 large Eggs
  • 1 1/2 cups Warm water
  • 1/4 tsp Salt
  • 1 tbsp Soy sauce
  • 1 tsp Sesame oil
  • 2 tbsp Scallions
  • 1/8 tsp White pepper(optional)

Instructions

  1. 1

Beat the eggs gently with the salt and white pepper until just combined, avoiding excess foam.

  2. 2

Whisk in the warm water, then strain the mixture through a fine sieve into two small heatproof bowls, skimming off any bubbles.

  3. 3

Cover each bowl tightly with foil or a plate and place in a steamer over simmering water.

  4. 4

Steam over medium-low heat for 12 minutes until the custard is just set with a slight wobble in the center.

  5. 5

Remove carefully, drizzle each custard with soy sauce and sesame oil, and top with sliced scallions. Serve warm.
