Ingredients

  • 1/2 lb ground turkey (93% lean)
  • 1/4 cup feta cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1/4 cup plain Greek yogurt
  • 1/2 cup cucumber, grated
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1

Prep (15 minutes): Mix turkey with oregano, salt, and black pepper. Divide into 2 portions and flatten each into a patty. Stir spinach and half the feta into a small bowl.

  2. 2

Stuff: Place a spoonful of the spinach-feta mixture in the center of each patty, then fold/press turkey around it to fully enclose. Lightly oil the patties’ surfaces.

  3. 3

Cook (15 minutes): Heat a skillet over medium-high heat. Cook burgers 6–8 minutes per side (until no longer pink in the center and juices run clear).

  4. 4

Make sauce (during the last few minutes of cooking): Stir Greek yogurt, grated cucumber, minced garlic, lemon juice, and a pinch of salt and pepper. Serve sauce with the burgers.
