Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1/2 cup red bell pepper, sliced
  • 1/2 cup green bell pepper, sliced
  • 2 tablespoons soy sauce (low‑sodium)
  • 1 tablespoon sriracha
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic, minced
  • 1/4 teaspoon ground black pepper(optional)

Instructions

  1. 1

Heat the vegetable oil in a large skillet or wok over medium‑high heat (about 30 seconds).

  2. 2

Add the minced garlic and stir‑fry for 15 seconds until fragrant.

  3. 3

Add the sliced bell peppers and stir‑fry for 2‑3 minutes until they begin to soften but stay crisp.

  4. 4

Stir in the drained chickpeas and continue to stir‑fry for another 2 minutes to heat through.

  5. 5

Mix in the soy sauce and sriracha, tossing everything together for 1 minute so the sauce coats the vegetables and chickpeas.

  6. 6

Season with black pepper, if using, and serve immediately.
