Ingredients

  • 600 g Pork belly, skin-on, thinly sliced
  • 3 tablespoons Low-sodium soy sauce (or tamari)
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Red chili paste (or sriracha, low-carb)
  • 1 teaspoon Erythritol (or other zero-calorie sweetener)
  • 1 teaspoon Rice vinegar
  • 1 teaspoon Olive oil

Instructions

  1. 1

In a bowl, whisk together soy sauce, grated ginger, minced garlic, chili paste, erythritol, rice vinegar, and olive oil to form the glaze.

  2. 2

Add the sliced pork belly to the glaze, toss to coat evenly, and let it marinate at room temperature for 15 minutes while you preheat the oven to 200 °C (400 °F).

  3. 3

Arrange the pork slices in a single layer on a parchment‑lined baking sheet, reserving any excess glaze for later.

  4. 4

Roast in the preheated oven for 20 minutes, then flip the pieces, brush with the remaining glaze, and continue roasting for another 10 minutes until the edges are caramelized and the pork is crisp.

  5. 5

Remove from the oven, let rest for 2 minutes, then serve hot as bite‑size appetizers.
