Ingredients

  • 10 oz oz Fresh spinach
  • 4 oz oz Feta cheese, crumbled
  • 8 sheets Phyllo dough, thawed
  • 3 Green onions, chopped
  • 2 tbsp tbsp Fresh dill, chopped
  • 2 Eggs, beaten
  • 3 tbsp tbsp Olive oil
  • 1/4 tsp tsp Salt
  • 1/4 tsp tsp Black pepper
  • 1 pinch Nutmeg(optional)

Instructions

  1. 1

Preheat oven to 375°F (190°C). Heat 1 tbsp olive oil in a large skillet over medium heat and sauté green onions for 2 minutes.

  2. 2

Add spinach in batches and cook until wilted, about 3-4 minutes. Transfer to a colander, press out excess moisture, and let cool. Chop roughly.

  3. 3

In a bowl, combine spinach, feta, dill, eggs, salt, pepper, and nutmeg. Mix well.

  4. 4

Brush a small baking dish with olive oil. Layer 4 phyllo sheets, brushing each with olive oil. Spread the spinach filling evenly over the phyllo.

  5. 5

Top with remaining 4 phyllo sheets, brushing each with olive oil. Score the top layers into squares with a sharp knife.

  6. 6

Bake for 30-35 minutes until golden and crisp. Let rest 5 minutes, cut, and serve warm.
