Ingredients

  • 8 oz Fresh spinach
  • 4 oz Feta cheese, crumbled
  • 3 Green onions, sliced
  • 2 tbsp Fresh dill, chopped
  • 1 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 2 Eggs
  • 1 tsp Lemon juice
  • 1/4 tsp Black pepper
  • 1/4 tsp Salt(optional)

Instructions

  1. 1

Heat olive oil in a large skillet over medium heat. Add green onions and garlic and sauté for 2 minutes until fragrant.

  2. 2

Add spinach in handfuls, tossing as it wilts, about 3-4 minutes. Stir in garlic-cooked mixture and cook 1 more minute.

  3. 3

Push spinach mixture to one side of the skillet. Crack eggs into the empty side and scramble until just set, about 3 minutes.

  4. 4

Fold eggs into the spinach, then add feta, dill, lemon juice, and pepper. Toss gently until feta softens, about 2 minutes.

  5. 5

Taste and adjust salt (feta is salty, so go easy). Serve warm, straight from the skillet.
