Ingredients
- 1.5 lbs Salmon fillets
- 1 cup Cherry tomatoes
- 1 whole English cucumber, diced
- 0.5 whole Red onion, sliced
- 3 tablespoons Olive oil
- 1 teaspoon Dried oregano
- 2 cloves Garlic, minced
- 2 tablespoons Lemon juice
- 0.5 cup Tzatziki sauce
- 0.25 cup Feta cheese crumbles
- 2 cups Cooked jasmine rice(optional)
- 4 pieces Warm pita bread(optional)

Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and dried oregano.

Place the salmon fillets, cherry tomatoes, and red onions on the sheet pan in a single layer.

Drizzle the olive oil mixture over the salmon and vegetables, tossing the vegetables slightly to coat.

Roast in the oven for 12-15 minutes, or until the salmon flakes easily with a fork and tomatoes have burst.

While roasting, prepare your base by portioning rice into bowls or warming the pita bread.

Remove the pan from the oven and use a fork to gently break the salmon into large bite-sized chunks.

Assemble the bowls by topping the base with salmon, roasted vegetables, fresh cucumber, feta, and a dollop of tzatziki.
