  • 1 pound Ground lamb
  • 1/2 cup Breadcrumbs
  • 1 large Egg
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 1 medium Red onion, sliced into wedges
  • 1 1/2 cups Cherry tomatoes
  • 2 tablespoons Olive oil
  • 4 pieces Pita bread rounds
  • 1/2 cup Tzatziki sauce
  • 2 tablespoons Fresh parsley, chopped(optional)

Instructions

    Preheat your oven to 400°F (200°C) and lightly grease a large rimmed sheet pan.

    In a large bowl, combine the ground lamb, breadcrumbs, egg, half of the minced garlic, oregano, and cumin.

    Roll the lamb mixture into 1-inch meatballs and place them evenly across the sheet pan.

    Scatter the red onion wedges and cherry tomatoes in the spaces between the meatballs.

    Drizzle the vegetables with olive oil and the remaining garlic, then season everything with a pinch of salt and pepper.

    Roast for 15-20 minutes until the meatballs are browned and cooked through, and the tomatoes have burst.

    During the last 2 minutes of roasting, place the pita bread directly on the oven rack to warm through.

    Assemble the gyros by stuffing pitas with meatballs and roasted vegetables, topped with a dollop of tzatziki and fresh parsley.
