Ingredients

  • 2 fillets salmon fillets
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seeds
  • 1 medium cucumber
  • 1 clove garlic
  • 1 tsp fresh ginger(optional)
  • 1 tbsp neutral oil (for searing)
  • 1/4 tsp kosher salt(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice cucumber thinly. Finely grate garlic (and ginger if using). In a small bowl, whisk soy sauce, sesame oil, honey, and rice vinegar to make the glaze.

  2. 2

Cook (12 minutes): Pat salmon dry and season lightly with salt and pepper. Heat neutral oil in a nonstick skillet over medium-high heat. Sear salmon 4–5 minutes per side until just cooked through.

  3. 3

Glaze: Reduce heat to medium. Pour in the sesame-soy glaze and spoon over salmon for 1–2 minutes until glossy and slightly thickened. Sprinkle with sesame seeds.

  4. 4

Quick cucumber salad: While salmon finishes, toss cucumber with a pinch of salt and a spoonful of any remaining glaze (or a splash of rice vinegar) to lightly dress. Serve salmon with the cucumber salad.
