Ingredients

  • 2 6-8 oz Halibut Fillet
  • 1 pint Cherry Tomatoes
  • 4 oz Feta Cheese
  • 2 tbsp Greek Yogurt or Heavy Cream
  • 3 tbsp Extra Virgin Olive Oil
  • 2 cloves Garlic
  • 1 whole Lemon
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  1. 1

Preheat oven to 400°F (200°C). On a baking sheet, toss cherry tomatoes with 1 tbsp of olive oil, minced garlic, salt, and pepper. Roast for 20-25 minutes until blistered and softened.

  2. 2

While tomatoes roast, prepare the whipped feta: Combine feta, Greek yogurt/cream, and remaining olive oil in a food processor or bowl. Blend until smooth and creamy. Set aside.

  3. 3

Pat halibut fillets dry and season generously with salt and pepper. Heat a large, oven-safe skillet over medium-high heat with remaining olive oil. Carefully place halibut fillets in the hot skillet.

  4. 4

Sear the halibut for 4-5 minutes per side until a golden crust forms and the fish is cooked through (internal temperature of 145°F/63°C).

  5. 5

Transfer the seared halibut to plates. Top each fillet generously with the whipped feta spread and arrange the roasted cherry tomatoes around the fish. Garnish with fresh lemon zest and serve immediately.
