Ingredients

  • 1 pound Large shrimp, peeled and deveined (tails on)
  • 1/3 cup Cornstarch
  • 1 cup Vegetable oil (for frying)
  • 6 cloves Garlic, minced
  • 4 Scallions, cut into 1-inch pieces
  • 1 teaspoon Sichuan peppercorns, toasted and ground
  • 1/2 teaspoon Kosher salt
  • 1 Fresh red chili, thinly sliced(optional)
  • 1/4 teaspoon White pepper(optional)

Instructions

  1. 1

Pat the shrimp dry with paper towels and toss with cornstarch until evenly coated. Let sit 5 minutes.

  2. 2

Heat the vegetable oil in a wok or heavy skillet over medium-high heat to about 350°F. Fry the shrimp in a single layer, in batches, for 2-3 minutes per side until golden and crisp. Drain on paper towels.

  3. 3

Pour off all but 1 tablespoon of oil. Return the wok to high heat and stir-fry the garlic, scallions, and chili (if using) for 1-2 minutes until fragrant.

  4. 4

Return the shrimp to the wok, sprinkle with the Sichuan peppercorn salt (ground peppercorns, kosher salt, and white pepper), and toss for 1 minute until well coated. Serve immediately.
