  • 1 lb Dry black beans, rinsed
  • 4 slices Smoked bacon, chopped
  • 8 oz Paio sausage or Kielbasa, sliced
  • 1 lb Beef chuck or pork shoulder, cubed
  • 1 large Onion, finely diced
  • 4 cloves Garlic cloves, minced
  • 3 leaves Bay leaves
  • 4 cups Beef broth
  • 2 cups Water
  • 1 whole Orange, halved(optional)
  • 1 tsp Salt and black pepper

Instructions

    Set the pressure cooker to 'Sauté' mode and crisp the bacon until the fat renders.

    Add the sliced sausage and cubed beef; brown the meat on all sides for about 5 minutes.

    Stir in the diced onion and minced garlic, sautéing until fragrant and translucent.

    Add the rinsed black beans, bay leaves, beef broth, and water to the pot.

    Place the orange halves on top (this helps tenderize the meat and cuts the heaviness) and lock the lid.

    Set to high pressure for 40 minutes, then allow a natural pressure release for 15 minutes.

    Remove the orange halves and bay leaves; stir the stew vigorously to break a few beans and thicken the sauce.
