Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 garlic clove, minced
  • 2 tablespoons flour (all‑purpose or chickpea)
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. 1

In a food processor combine chickpeas, parsley, cumin, coriander, garlic, flour, salt and pepper; pulse until a coarse, sticky mixture forms.

  2. 2

Form the mixture into 4 equal patties, about ½‑inch thick.

  3. 3

Heat the olive oil in a skillet over medium‑high heat; add the patties and fry 4‑5 minutes per side until golden and crisp.

  4. 4

While the patties cook, whisk together tahini, lemon juice, a pinch of salt and 2‑3 tablespoons water until smooth and pourable.

  5. 5

Serve the hot falafel patties drizzled with tahini sauce.
