Ingredients
- 0.5 cup Vegetable oil
- 1 cup Whole milk
- 2 Large eggs
- 3 cups Tapioca flour (polvilho doce)
- 1 cup Parmesan cheese, grated
- 0.5 cup Mozzarella cheese, shredded
- 1 teaspoon Salt
- 0.25 teaspoon Garlic powder(optional)

Preheat your oven to 400°F (200°C) and generously grease a standard 12-cup muffin tin.

Place the milk, oil, eggs, and salt into the blender jar.

Add the tapioca flour to the blender and pulse until the mixture is completely smooth.

Add the grated Parmesan and shredded mozzarella, then pulse for just 5 seconds to incorporate without fully liquefying the cheese.

Pour the batter into the prepared muffin tins, filling each cup about three-quarters of the way full.

Bake for 15 to 20 minutes, or until the puffs have risen and are starting to turn a light golden brown.

Remove from the oven and let cool for 2 minutes before popping them out of the tin.
