Ingredients

  • 1 lb Italian Sausage
  • 1 medium Yellow Onion
  • 3 cloves Garlic
  • 6 cups Chicken Broth
  • 28 oz Crushed Tomatoes
  • 2 tbsp Tomato Paste
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 8 sheets Lasagna Noodles
  • 1 cup Ricotta Cheese
  • 1 cup Shredded Mozzarella
  • 2 cups Fresh Spinach(optional)

Instructions

    In a large Dutch oven or pot, brown the Italian sausage over medium-high heat until fully cooked, breaking it into small crumbles.

    Add the diced onion to the pot and sauté for 5 minutes until translucent, then stir in the minced garlic for 1 minute.

    Stir in the tomato paste, dried basil, and dried oregano, cooking for 2 minutes to deepen the flavor.

    Pour in the chicken broth and crushed tomatoes, bringing the mixture to a rolling boil.

    Break the lasagna noodles into bite-sized pieces and add them to the pot, stirring frequently to prevent sticking.

    Reduce heat to medium and simmer for 12-15 minutes or until the noodles are tender.

    Stir in the fresh spinach (if using) until wilted, then taste and season with salt and pepper.

    Serve hot in bowls topped with a generous dollop of ricotta cheese and a sprinkle of mozzarella.
