Ingredients

  • 12 oz Shrimp, peeled and deveined
  • 1 cup Orzo pasta
  • 2.5 cups Chicken or vegetable broth
  • 4 cloves Garlic, minced
  • 1 Lemon (zest and juice)
  • 3 cups Baby spinach
  • 2 tbsp Olive oil
  • 1 tbsp Butter
  • 0.25 tsp Red pepper flakes(optional)
  • to taste Salt and black pepper
  • 2 tbsp Fresh parsley, chopped(optional)
  • 2 tbsp Grated Parmesan(optional)

Instructions

  1. 1

Pat shrimp dry and season with salt, pepper, and red pepper flakes. Zest and juice the lemon.

  2. 2

Heat olive oil in a large skillet over medium-high heat. Sear shrimp 1-2 minutes per side until just pink, then remove and set aside.

  3. 3

Reduce heat to medium. Add butter and garlic; sauté 30 seconds until fragrant. Stir in orzo and toast 1-2 minutes.

  4. 4

Pour in broth, lemon zest, and half the lemon juice. Bring to a simmer, cover, and cook 10-12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.

  5. 5

Stir in spinach until wilted, about 1 minute. Return shrimp and any juices to the pan and warm through, 1-2 minutes.

  6. 6

Finish with remaining lemon juice, parsley, and Parmesan. Season to taste and serve immediately.
