Ingredients

Servings:4
  • 500 grams Ground pork (with 20% fat)
  • 1 teaspoon Baking powder
  • 2 tablespoons Fish sauce
  • 1 tablespoon Minced garlic
  • 1 1/2 tablespoons Sugar
  • 1/2 teaspoon Black pepper
  • 1 package Rice paper wrappers
  • 1 bunch Fresh mint and cilantro
  • 1 cup Pickled carrots and daikon
  • 1 cup Cucumber sticks
  • 200 grams Rice vermicelli noodles
  • 1 cup Peanut dipping sauce

Instructions

  1. 1

Mix the ground pork with baking powder, fish sauce, garlic, sugar, and pepper; knead vigorously for 10 minutes until the paste is elastic.

  2. 2

Let the pork mixture marinate in the refrigerator for at least 30 minutes to firm up.

  3. 3

Form the pork paste into long sausages or small patties around lemongrass stalks or bamboo skewers.

  4. 4

Grill the pork over medium heat or in an oven at 400°F (200°C) for 12-15 minutes until charred and cooked through.

  5. 5

Dip a sheet of rice paper quickly in warm water to soften and lay it flat on a plate.

  6. 6

Place a piece of grilled pork, a small handful of vermicelli, cucumber, pickled vegetables, and fresh herbs onto the lower third of the paper.

  7. 7

Fold the sides of the rice paper inward and roll tightly from the bottom up.

  8. 8

Serve immediately with a side of warm peanut dipping sauce or Vietnamese nuoc cham.
