Ingredients
- 2 cups Cooked jasmine rice (day-old preferred)
- 150 g Chicken breast (or shrimp), cut into small pieces
- 2 Egg
- 1 Shallot, finely chopped
- 2 cloves Garlic, minced
- 3 tbsp Sweet soy sauce (kecap manis)
- 1 tbsp Soy sauce
- 2 tbsp Neutral oil (for frying)
- 0.5 tsp Salt(optional)
- 0.25 tsp Ground white pepper (or black pepper)(optional)
- 2 tbsp Green onion, sliced (optional garnish)(optional)
Instructions
- 1
Prep (about 10 minutes): Finely chop the shallot and mince the garlic. Cut the chicken into small pieces (or prep shrimp). Slice green onion if using. Crack eggs into a bowl.
- 2
Cook (about 15 minutes): Heat a wok or large skillet over high heat with 2 tbsp oil. Add chicken (or shrimp) and stir-fry until cooked and lightly browned, about 4–6 minutes. Push to one side.
- 3
Add aromatics: In the empty space, add shallot and garlic and stir-fry until fragrant, about 30–60 seconds.
- 4
Scramble egg: Pour in beaten eggs and scramble quickly, then mix with the chicken/shrimp.
- 5
Fry the rice: Add cooked rice, break up clumps, and stir-fry 3–5 minutes until hot and slightly dry.
- 6
Season and finish: Stir in kecap manis and soy sauce, add pepper (and salt only if needed), and toss until the rice is evenly coated and glossy, about 2–3 minutes. Serve immediately, topped with green onion if using.
