Ingredients

  • 1 cup All-purpose flour
  • 1 1/4 cups Milk
  • 3 Eggs
  • 1 1/2 cups Cottage cheese (or farmer's cheese)
  • 2 tbsp Sugar
  • 1 Egg yolk
  • 3 tbsp Butter, melted
  • 1/4 tsp Salt
  • 1/2 tsp Vanilla extract(optional)
  • 1/4 cup Sour cream, for serving(optional)

Instructions

  1. 1

Make the batter: whisk the eggs with milk, flour, salt, and 1 tbsp melted butter until smooth. Let rest 10 minutes.

  2. 2

Heat a lightly buttered 8-inch skillet over medium heat. Pour in a ladle of batter, swirling to coat thinly. Cook 1-2 minutes until lightly golden, flip, and cook 30 seconds more. Repeat with remaining batter to make 8-10 crepes.

  3. 3

Mix the filling: stir together cottage cheese, sugar, egg yolk, and vanilla until well combined.

  4. 4

Spoon 2 tbsp of filling onto each crepe, fold in the sides, and roll up tightly.

  5. 5

Melt remaining butter in a skillet over medium heat and pan-fry the nalysnyky seam-side down, 2-3 minutes per side, until golden and warmed through.

  6. 6

Serve warm with a dollop of sour cream.
