Ingredients

  • 4 medium Russet potatoes
  • 1 small Yellow onion
  • 1 large Egg
  • 2 tbsp All-purpose flour
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/3 cup Vegetable oil
  • 1/2 cup Sour cream

Instructions

  1. 1

Peel the potatoes and onion. Grate both on the fine side of a box grater or in a food processor (about 5 minutes).

  2. 2

Place grated potato and onion in a clean kitchen towel and squeeze out as much liquid as possible. Let the starch settle in the drained liquid, then add the starch back to the mixture.

  3. 3

Transfer the potato-onion mixture to a bowl. Stir in the egg, flour, salt, and pepper until well combined (about 2 minutes).

  4. 4

Heat oil in a large skillet over medium-high heat. Drop spoonfuls of batter into the hot oil, flattening each into a 1/2-inch thick pancake. Fry 3-4 minutes per side until deep golden brown and crispy.

  5. 5

Drain on paper towels and season lightly with salt. Serve immediately with a dollop of sour cream.
