Ingredients

  • 2 cups All-purpose flour
  • 3/4 cup Warm water
  • 1 Egg
  • 1/2 tsp Salt
  • 3 medium Russet potatoes
  • 2 Yellow onion
  • 2 tbsp Butter
  • 1/2 cup Sour cream
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Make the dough: combine flour and salt in a bowl, add the egg and warm water, and knead for 5-8 minutes until smooth and elastic. Cover and rest for 30 minutes.

  2. 2

Meanwhile, peel and boil the potatoes in salted water for 15 minutes until tender. Drain and mash with 1 tablespoon butter, salt, and pepper.

  3. 3

Dice one onion and fry in 1 tablespoon butter until golden, about 5 minutes. Stir half into the mashed potatoes.

  4. 4

Roll the dough to 1/8 inch thick, cut 3-inch circles, place a spoonful of potato filling on each, fold into half-moons, and pinch the edges firmly to seal.

  5. 5

Boil varenyky in salted water in batches for 3-4 minutes after they float to the surface. Remove with a slotted spoon.

  6. 6

Dice the remaining onion and fry in the remaining butter until crispy. Toss the drained varenyky in the fried onions and serve with sour cream.
