Ingredients

  • 2 cups Vegetable broth
  • 2 tbsp White miso paste
  • 4 oz Ramen noodles (or udon)
  • 6 oz Mushrooms (shiitake or cremini), sliced
  • 2 cups Spinach
  • 1 tsp Soy sauce(optional)
  • 1 tsp Sesame oil(optional)
  • 2 tbsp Green onions, thinly sliced(optional)

Instructions

  1. 1

Bring the vegetable broth to a gentle simmer in a pot. In a small bowl, whisk the miso paste with 2–3 tbsp of hot broth until smooth, then whisk it back into the pot (avoid boiling after adding miso).

  2. 2

Add the sliced mushrooms and simmer for 3 minutes. Add the noodles and cook according to package directions, usually about 4–6 minutes, until tender.

  3. 3

Stir in the spinach and cook just until wilted, about 1 minute. Turn off the heat and season with soy sauce and sesame oil if using.

  4. 4

Ladle into bowls and top with green onions if desired.
