Ingredients

  • 200 g soba noodles (buckwheat or buckwheat blend)
  • 1 tbsp green tea (matcha or brewed green tea)(optional)
  • 1 tbsp sesame seeds (toasted)
  • 1 tsp sesame oil
  • 2 tbsp lime juice
  • 1.5 tbsp soy sauce (or tamari)
  • 1 tsp honey (or maple syrup)(optional)
  • 1 tsp rice vinegar(optional)
  • 1 clove garlic(optional)
  • 1 tsp fresh ginger(optional)
  • 1 tbsp water(optional)
  • 0.5 cup cucumber (thinly sliced)(optional)
  • 2 tbsp scallions (thinly sliced)(optional)

Instructions

  1. 1

Bring a pot of water to a boil. Cook soba noodles according to package directions (about 4–6 minutes). If using matcha, stir it into the cooking water for a subtle green-tea note, then drain.

  2. 2

For chilled soba: rinse noodles under cool water and drain well. For warm soba: keep noodles warm and drain thoroughly.

  3. 3

In a bowl, whisk sesame seeds, sesame oil, lime juice, soy sauce, and honey (and rice vinegar if using). Add grated garlic and ginger; loosen with 1 tbsp water if the sauce is too thick.

  4. 4

Toss drained soba with the sesame-lime sauce until evenly coated. Serve topped with cucumber and scallions (if using).
