Ingredients

  • 200 g spaghetti
  • 2 tbsp white miso paste
  • 3 tbsp unsalted butter
  • 3 cloves garlic
  • 3 scallions
  • 1/2 cup reserved pasta water
  • 1 tsp toasted sesame oil(optional)
  • to taste black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the spaghetti until al dente, about 10-11 minutes. Reserve 1/2 cup pasta water before draining.

  2. 2

While the pasta cooks, melt the butter in a large skillet over medium heat. Add minced garlic and the white parts of the scallions; sauté 2-3 minutes until fragrant but not browned.

  3. 3

Whisk the miso paste into the skillet with a splash of the reserved pasta water until smooth, forming a glossy sauce.

  4. 4

Add the drained spaghetti to the skillet and toss well, adding more pasta water a little at a time until the sauce coats every strand, about 1-2 minutes.

  5. 5

Off the heat, stir in sesame oil (if using) and top with sliced scallion greens and black pepper. Serve immediately.
