Ingredients

  • 500 grams Chicken breast
  • 3 cups Chicken broth
  • 3 cups All-purpose flour
  • 2 tablespoons Unsalted butter
  • 0.5 cup Finely chopped onion
  • 2 cloves Minced garlic
  • 0.5 cup Cream cheese or Requeijão(optional)
  • 2 tablespoons Fresh parsley
  • 2 cups Breadcrumbs
  • 2 units Large eggs
  • 1 liter Vegetable oil for frying
  • 1 teaspoon Salt and paprika

Instructions

    Boil the chicken breast in the broth until tender, then shred the meat finely and reserve the cooking liquid.

    Sauté onions and garlic in a pan, add the shredded chicken, parsley, salt, paprika, and cream cheese; mix well and let cool.

    In a large pot, bring 3 cups of the reserved chicken broth and butter to a boil.

    Add the flour all at once to the boiling broth and stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the bottom.

    Knead the warm dough on a clean surface for a few minutes until smooth, then take small portions and flatten them into circles.

    Place a teaspoon of chicken filling in the center and pinch the dough upward to form a teardrop shape.

    Dip each mini coxinha into beaten eggs and then roll in breadcrumbs until evenly coated.

    Deep fry in hot oil in small batches until golden brown, then drain on paper towels.
