Ingredients

  • 450 g Large shrimp, peeled and deveined
  • 1 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced
  • 1 tsp Dried oregano
  • 1/2 tsp Ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Plain Greek yogurt
  • 1/2 cup Cucumber, grated and squeezed dry
  • 1 tbsp Dill (fresh or dried)(optional)
  • 1 medium Tomato, diced
  • 1/4 small Red onion, finely diced(optional)
  • 1/2 cup Cucumber, diced (for salad)
  • 1 tsp Olive oil (for salad)
  • 1 tsp Red wine vinegar (or lemon juice)

Instructions

  1. 1

Prep (15 minutes): If using wooden skewers, soak them in water. Pat shrimp dry, then toss with olive oil, lemon juice, 1 minced garlic clove, oregano, cumin, salt, and pepper.

  2. 2

Make tzatziki (during prep): Mix Greek yogurt with grated cucumber (squeezed dry), remaining minced garlic, and dill. Taste and adjust with a pinch of salt and a squeeze of lemon if needed.

  3. 3

Cook shrimp (10 minutes): Thread shrimp onto skewers. Heat a grill pan or skillet over medium-high heat and cook 2–3 minutes per side (until pink and just cooked through).

  4. 4

Serve: Toss tomato, diced cucumber, and (if using) red onion with olive oil and vinegar. Plate shrimp with tzatziki and the simple tomato-cucumber salad.
