Ingredients

  • 1 lb Low-sodium Italian turkey sausage
  • 1 medium Eggplant
  • 2 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 3 tbsp Olive oil
  • 3 cloves Garlic
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1 cup Crushed tomatoes, no salt added
  • 1/4 cup Fresh basil(optional)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Preheat oven to 400°F (200°C). Dice the eggplant, slice the zucchini, and cut the bell peppers into strips.

  2. 2

In a large skillet over medium heat, brown the sausage (casings removed) for 6-8 minutes, breaking it into chunks. Drain excess fat.

  3. 3

Toss the vegetables with olive oil, minced garlic, oregano, thyme, and black pepper in a large bowl.

  4. 4

Spread the vegetables in a 9x13 baking dish, top with the sausage and pour the crushed tomatoes over everything. Stir gently to combine.

  5. 5

Bake uncovered for 40-45 minutes, stirring once halfway through, until vegetables are tender and lightly browned.

  6. 6

Rest 5 minutes, garnish with fresh basil, and serve.
