Ingredients

  • 7 oz Chicken breast
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 2 cloves Garlic
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 10 oz Baby potatoes
  • 0.5 cup Cucumber
  • 0.5 cup Tomatoes
  • 2 tbsp Red onion
  • 0.25 cup Pitted olives
  • 1 tbsp Red wine vinegar

Instructions

    Heat oven to 425°F (220°C). Halve potatoes and toss with 1 tbsp olive oil, salt, and pepper; roast 20 minutes.

    Cut chicken into bite-size pieces. Mix remaining 1 tbsp olive oil, lemon juice, oregano, minced garlic, salt, and pepper. Toss chicken in marinade.

    Broil chicken 6–8 minutes, stirring once, until cooked through and lightly charred.

    Combine cucumber, tomatoes, red onion, and olives with red wine vinegar and a pinch of salt.

    Serve chicken with roasted potatoes and the Greek salad.
