Ingredients
- 12 oz mareco (or chicken breast, sliced thin)
- 3 tbsp soy sauce
- 1 tbsp mirin(optional)
- 1 tbsp brown sugar
- 1 tsp rice vinegar
- 2 cloves garlic
- 1 tsp fresh ginger
- 1 tsp sesame oil
- 1 tbsp neutral oil (canola/vegetable)
- 2 cups broccoli florets
- 1 medium bell pepper
- 1 medium carrots
- 1 tsp cornstarch(optional)
- 1 tbsp water(optional)
- 1 cup cooked jasmine rice
- 1 tsp toasted sesame seeds
Instructions
- 1
Prep (10 minutes total): Slice the mareco thin. Mince garlic and ginger. Chop broccoli, bell pepper, and carrots into bite-size pieces.
- 2
Cook (15 minutes total): In a small bowl, whisk soy sauce, mirin (if using), brown sugar, and rice vinegar. If using cornstarch, whisk it with water and set aside.
- 3
Heat a large skillet or wok over high heat. Add neutral oil and sesame oil, then stir-fry mareco until browned and cooked through, about 4–5 minutes. Transfer to a plate.
- 4
Stir-fry vegetables in the same pan until crisp-tender, about 6–7 minutes.
- 5
Return mareco to the pan. Pour in the teriyaki glaze and toss to coat. Simmer 1–2 minutes until glossy; if using cornstarch slurry, add it now and stir until thickened.
- 6
Serve over rice and sprinkle with sesame seeds.
