Ingredients
- 12 oz mareco (or similar stir-fry vegetable, sliced)
- 3 tbsp soy sauce (low-sodium if available)
- 1 tbsp fresh ginger (grated)
- 2 cloves garlic (minced)
- 1 tbsp rice vinegar
- 1 tbsp honey or brown sugar
- 1 tsp cornstarch
- 2 tbsp water
- 1 tbsp neutral oil (sesame or canola)
- 2 cups broccoli florets
- 1 medium bell pepper (sliced)
- 1 medium carrot (thinly sliced)
- 1 tsp sesame oil(optional)
- 1 tsp sesame seeds(optional)
Instructions
- 1
Prep (10 minutes): Slice the mareco; mince the garlic; grate the ginger; thinly slice the carrot; slice the bell pepper; and separate broccoli into florets.
- 2
Cook the veggies (15 minutes): Heat a large skillet or wok over medium-high heat with the neutral oil. Add carrot and broccoli and stir-fry for 4 minutes, then add bell pepper and cook 2 more minutes until crisp-tender.
- 3
Stir-fry mareco (15 minutes): Add the sliced mareco, garlic, and ginger. Stir-fry for 6 minutes, tossing frequently so the mareco browns lightly.
- 4
Make and glaze (15 minutes): In a small bowl, whisk soy sauce, rice vinegar, honey, cornstarch, and water until smooth. Pour into the pan and toss for 2–3 minutes until glossy and thickened. Turn off heat and stir in sesame oil if using.
- 5
Serve: Plate immediately and top with sesame seeds if desired.
