Ingredients

  • 6 cups mareco (or escarole/romaine), chopped
  • 6 oz soba noodles (buckwheat)
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp rice vinegar
  • 1 tsp honey (or maple syrup)
  • 1 tbsp toasted sesame seeds
  • 1 clove garlic, minced(optional)
  • 1 tsp fresh ginger, grated(optional)
  • 0.25 tsp black pepper(optional)
  • 4 cups water(optional)

Instructions

  1. 1

Bring a large pot of water to a boil. Cook the soba noodles according to package directions (about 4–6 minutes), then drain and rinse briefly under cool water; set aside.

  2. 2

While the noodles cook (about 10 minutes total prep), chop the mareco and mince the garlic and grate the ginger if using. Whisk sesame oil, soy sauce, rice vinegar, honey, sesame seeds, garlic, ginger, and black pepper into a dressing.

  3. 3

In the same pot (or a large skillet), warm a splash of water over medium-high heat and wilt the chopped mareco for 2–3 minutes until tender but still bright.

  4. 4

Toss the warm mareco with the dressing, then add the cooked soba and toss again until evenly coated. Serve warm.
