Ingredients

  • 300 g mareco (or similar firm white fish fillets)
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest(optional)
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill (or more parsley)(optional)

Instructions

  1. 1

Prep (10 minutes): Pat the mareco dry, then season both sides with salt and black pepper. Chop the parsley and dill, and zest the lemon if using.

  2. 2

Sear (about 7 minutes): Heat 1 tbsp olive oil in a skillet over medium-high heat. Add the mareco and sear until browned and nearly cooked through, about 3–4 minutes per side depending on thickness.

  3. 3

Finish (about 5 minutes): Reduce heat to medium. Add the remaining 1 tbsp olive oil, lemon juice, and lemon zest (if using). Spoon the lemon-herb oil over the fish for 1–2 minutes.

  4. 4

Serve (within remaining time): Turn off the heat and stir in parsley and dill. Let stand 1 minute, then serve immediately.
