Ingredients

  • 12 oz chicken breast, cutlets
  • 1.5 tbsp olive oil
  • 2 cloves garlic
  • 1 large lemon (zest and juice)
  • 0.5 cup chicken broth
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp butter(optional)
  • 2 tbsp fresh parsley, chopped(optional)

Instructions

  1. 1

Prep (10 minutes): Pat chicken dry and season both sides with salt, pepper, oregano, and thyme. Mince garlic and zest the lemon; then juice the lemon.

  2. 2

Cook (20 minutes): Heat olive oil in a skillet over medium-high heat. Add chicken and sear 4–5 minutes per side until cooked through and browned. Transfer chicken to a plate.

  3. 3

Make the light pan sauce: Reduce heat to medium. Add garlic to the skillet and cook 30–60 seconds until fragrant. Pour in chicken broth and scrape up browned bits; simmer 2–3 minutes.

  4. 4

Finish: Stir in lemon zest and lemon juice. If using butter, whisk it in until glossy. Return chicken to the skillet and spoon sauce over; cook 1–2 minutes to reheat. Top with parsley if desired and serve.
