Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 1 large lemon
  • 2 cloves garlic
  • 0.5 tsp dried oregano
  • 0.25 tsp dried thyme
  • 0.5 cup chicken broth (low-sodium preferred)
  • 1 tbsp unsalted butter(optional)
  • 2 tbsp fresh parsley, chopped(optional)

Instructions

  1. 1

Prep (10 minutes): Pat chicken dry and slice into 2 cutlets. Season both sides with salt, pepper, oregano, and thyme. Zest and juice the lemon; mince the garlic and chop parsley.

  2. 2

Sear (8 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 3–4 minutes per side until browned and cooked through (internal temp 165°F / 74°C). Transfer chicken to a plate.

  3. 3

Finish sauce (10 minutes): Reduce heat to medium. Add garlic to the skillet and cook 30 seconds, then stir in chicken broth and lemon juice. Simmer 2–3 minutes to lightly reduce, scraping up browned bits.

  4. 4

Serve (0–2 minutes): Turn off heat and whisk in butter (if using). Return chicken and spoon sauce over. Top with lemon zest and parsley; serve immediately.
