Macarena Lemon Herb Shrimp Pasta

Ingredients

  • 12 oz Large shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 tbsp Lemon zest
  • 2 tbsp Fresh lemon juice
  • 1 tsp Dried oregano
  • 1 tbsp Fresh parsley, chopped
  • 1 tbsp Fresh basil, chopped(optional)
  • 6 oz Pasta (spaghetti or linguine)
  • 1/2 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)
  • 1/4 tsp Red pepper flakes(optional)

Instructions

    Bring a pot of salted water to a boil. Cook the pasta until al dente, then reserve about 1/2 cup pasta water and drain.

    While the pasta cooks, pat shrimp dry and season with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sauté shrimp for 1–2 minutes per side until just pink and cooked through; transfer to a plate.

    In the same skillet, add garlic and oregano and sauté for 30–45 seconds until fragrant. Stir in lemon zest, lemon juice, and a splash of reserved pasta water to create a silky sauce.

    Add drained pasta and shrimp back to the skillet. Toss until evenly coated, adding more pasta water as needed. Stir in parsley (and basil if using) and red pepper flakes to taste. Serve immediately.
