Ingredients

  • 450 g Ground chicken
  • 12 Green cabbage leaves (large)
  • 4 Scallions
  • 1 tbsp grated Fresh ginger
  • 2 cloves Garlic
  • 2 tbsp Coconut aminos
  • 1 tbsp Rice vinegar
  • 2 tbsp Avocado oil
  • 1 Egg
  • 1/2 tsp White pepper
  • 1/2 tsp Salt
  • 1 tsp Chili flakes(optional)

Instructions

  1. 1

Bring a large pot of water to a boil. Carefully remove 12 large cabbage leaves, trim the thick center ribs, and blanch in the boiling water for 2-3 minutes until pliable. Transfer to an ice bath, then pat dry thoroughly. (10 minutes)

  2. 2

In a bowl, combine ground chicken, finely sliced scallions, grated ginger, minced garlic, coconut aminos, rice vinegar, egg, white pepper, and salt. Mix vigorously for 2 minutes until the filling is sticky and well combined. (10 minutes)

  3. 3

Lay a cabbage leaf flat, place 2 tablespoons of filling in the center, fold the sides over, and roll up tightly into a small parcel. Repeat with remaining leaves and filling. (20 minutes)

  4. 4

Heat avocado oil in a large nonstick skillet over medium heat. Place the parcels seam-side down and pan-fry for 4-5 minutes until golden and crisp on the bottom.

  5. 5

Add 1/4 cup water to the skillet, cover immediately, and steam for 6-7 minutes until the filling is cooked through. Uncover and cook 1-2 more minutes to re-crisp the bottoms.

  6. 6

Garnish with extra scallions and chili flakes if desired, and serve hot. (5 minutes)
