Ingredients

  • 1 tbsp olive oil
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 3/4 cup red lentils (dry)
  • 1 medium sweet potato
  • 1 cup crushed tomatoes
  • 3 cups vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley (chopped)(optional)

Instructions

  1. 1

Prep (15 minutes): Dice the onion and mince the garlic. Peel and cube the sweet potato. Rinse the lentils under cold water.

  2. 2

Cook (45 minutes): In a pot, heat olive oil over medium heat. Add onion and cook 5–7 minutes until softened. Stir in garlic and cook 30 seconds, then add cumin, coriander, paprika, and turmeric and cook 30 seconds until fragrant.

  3. 3

Add lentils, sweet potato, crushed tomatoes, and vegetable broth. Bring to a boil, then reduce to a gentle simmer. Cover and cook 35–40 minutes, stirring occasionally, until lentils are tender and the stew is thick.

  4. 4

Finish: Stir in salt and black pepper. Simmer uncovered 5 minutes to thicken if needed. Turn off heat and stir in lemon juice. Top with parsley if using, then serve.
