Ingredients

  • 180 g spaghetti
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp cracked black pepper
  • 0.5 tsp salt(optional)
  • 2 tbsp Parmesan cheese (finely grated)(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the spaghetti until al dente, about 9–10 minutes; reserve about 1/2 cup pasta water, then drain.

  2. 2

While the pasta cooks, whisk olive oil with lemon zest, lemon juice, and cracked black pepper in a large serving bowl.

  3. 3

Add the drained pasta to the bowl and toss well. Add a splash of reserved pasta water as needed to make a glossy sauce, then taste and adjust with more pepper and a little salt if desired.

  4. 4

Serve immediately, topping with optional Parmesan if using.
