Ingredients
- 1 can (15 oz / 425 g) Canned cannellini (white) beans, drained and rinsed
- 4 cups Fresh spinach
- 1 tbsp Olive oil
- 2 cloves Garlic, minced
- 1/2 medium Onion, finely chopped
- 2 cups Vegetable broth (or water)
- 1/2 tsp Dried oregano
- 1/4 tsp Crushed red pepper flakes(optional)
- 1 tbsp Lemon juice
- 1/4 tsp Salt
- 1/4 tsp Black pepper

Prep (10 minutes): Chop the onion and mince the garlic. Rinse and drain the cannellini beans. Measure the broth, seasonings, and lemon juice; rinse and set aside the spinach.

Cook (18 minutes): In a pot over medium heat, warm the olive oil. Add onion and cook 4 minutes until softened. Add garlic and cook 30–60 seconds until fragrant.

Add beans, broth, oregano, red pepper flakes (if using), salt, and black pepper. Simmer for 12 minutes, stirring occasionally, until the stew thickens slightly.

Stir in the spinach and cook 2 minutes until wilted. Turn off heat and stir in lemon juice. Taste and adjust seasoning, then serve.
