Ingredients
- 4 pieces Boneless skinless chicken breasts
- 1/3 cup Extra virgin olive oil
- 1/4 cup Fresh lemon juice
- 1 tablespoon Lemon zest
- 4 cloves Garlic cloves, minced
- 1 tablespoon Fresh rosemary, chopped
- 1 teaspoon Fresh thyme leaves
- 1 teaspoon Dried oregano
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
- 1/4 teaspoon Red pepper flakes(optional)
Instructions
- 1
Place the chicken breasts between two sheets of plastic wrap and pound them to an even 3/4-inch thickness.
- 2
In a small bowl, whisk together the olive oil, lemon juice, zest, garlic, rosemary, thyme, oregano, salt, pepper, and red pepper flakes.
- 3
Place the chicken in a large resealable bag or shallow dish and pour the marinade over it, ensuring all sides are coated.
- 4
Refrigerate the chicken for at least 30 minutes, but no longer than 4 hours to prevent the lemon juice from making the meat mushy.
- 5
Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.
- 6
Remove chicken from the marinade and grill for 6 to 7 minutes per side, or until the internal temperature reaches 165°F.
- 7
Transfer the chicken to a clean plate and tent loosely with aluminum foil.
- 8
Allow the chicken to rest for 5 to 10 minutes before slicing to keep the juices locked inside.
