Ingredients
- 2 pounds Boneless, skinless chicken breasts
- 1/2 cup Extra virgin olive oil
- 1/4 cup Fresh lemon juice
- 4 cloves Garlic cloves, minced
- 1 tablespoon Fresh rosemary, finely chopped
- 1 tablespoon Fresh thyme leaves
- 1 teaspoon Dried oregano
- 1 tablespoon Lemon zest
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
- 1 teaspoon Honey(optional)
- 1/4 teaspoon Red pepper flakes(optional)
Instructions
- 1
Place the chicken breasts between two sheets of plastic wrap and pound them to an even half-inch thickness to ensure uniform cooking.
- 2
In a medium glass bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, lemon zest, salt, pepper, and honey.
- 3
Place the chicken in a large resealable bag and pour the marinade over it, ensuring every piece is thoroughly coated.
- 4
Seal the bag and refrigerate for at least 30 minutes, but no longer than 4 hours, as the acid in the lemon juice will begin to cook the meat.
- 5
Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates to prevent sticking.
- 6
Remove the chicken from the marinade and grill for 5 to 7 minutes per side, or until the internal temperature reaches 165°F.
- 7
Transfer the chicken to a clean plate and tent loosely with aluminum foil for 5 minutes to allow the juices to redistribute.
- 8
Garnish with fresh parsley and extra lemon wedges before serving alongside roasted vegetables or a Greek salad.
