Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 0.25 cup lemon juice
  • 1 tbsp lemon zest
  • 3 cloves garlic
  • 1 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.5 cup chicken broth
  • 6 oz pasta (penne or spaghetti)
  • 0.25 cup parmesan cheese(optional)
  • 2 tbsp fresh parsley (chopped)(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta according to package directions until al dente, then reserve about 1/2 cup pasta water and drain.

  2. 2

While the pasta cooks, cut the chicken into bite-size pieces. Season with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the chicken until browned and cooked through, about 6–8 minutes.

  3. 3

Add garlic to the skillet and cook for 30–60 seconds until fragrant. Stir in lemon juice, lemon zest, oregano, basil, and chicken broth. Simmer 3–4 minutes to lightly reduce.

  4. 4

Add the drained pasta to the skillet and toss to coat. If needed, add a splash of reserved pasta water to loosen the sauce. Cook 1–2 minutes to heat through and thicken slightly.

  5. 5

Turn off the heat and stir in parmesan and parsley (if using). Taste and adjust seasoning with more pepper or a little salt if needed. Serve immediately.
