Ingredients

  • 12 oz boneless, skinless chicken breast
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1.5 tbsp olive oil
  • 3 cloves garlic
  • 1 large lemon (zest and juice)
  • 0.5 cup chicken broth
  • 1 tbsp unsalted butter
  • 0.5 tsp dried Italian seasoning(optional)
  • 2 tbsp fresh parsley (chopped)(optional)

Instructions

  1. 1

Prep (10 minutes): Pat the chicken dry and season both sides with salt and pepper. Mince the garlic. Zest and juice the lemon; chop parsley if using.

  2. 2

Cook (20 minutes): Heat olive oil in a large skillet over medium-high heat. Add chicken and sear until golden and cooked through, about 5–6 minutes per side. Transfer chicken to a plate.

  3. 3

In the same skillet, reduce heat to medium. Add garlic and Italian seasoning (if using) and cook until fragrant, about 30 seconds. Stir in chicken broth and lemon juice (and zest). Simmer 2–3 minutes to slightly reduce.

  4. 4

Return chicken to the skillet and simmer in the sauce until heated through and lightly coated, about 2–3 minutes. Turn off heat and stir in butter until melted. Taste and adjust seasoning. Garnish with parsley (if using) and serve.
