  • 1.5 lbs Lamb Shoulder
  • 1 cup Greek Yogurt
  • 3 tbsp Ghee
  • 2 tbsp Kashmiri Chili Powder
  • 6 whole Cardamom Pods
  • 1 head Cauliflower
  • 1 whole Cinnamon Stick

Instructions

    Bloom whole spices in ghee until fragrant.

    Brown the lamb in batches to ensure a deep crust.

    Whisk chili powder into yogurt and temper it slowly into the pot to prevent curdling.
