Ingredients

  • 12 oz ground chicken
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 2 cloves garlic
  • 2 stalks green onions
  • 1/2 medium cucumber
  • 8 leaves romaine lettuce leaves
  • 1 tsp sesame oil(optional)
  • 1 tsp rice vinegar(optional)
  • 1 tsp neutral oil (for cooking)(optional)

Instructions

  1. 1

Prep (about 15 minutes total prep): Mince the garlic. Slice the green onions. Dice the cucumber into small pieces. Rinse and pat dry the lettuce leaves.

  2. 2

Cook (about 15 minutes): Heat a skillet over medium-high heat with a small splash of neutral oil. Add ground chicken and cook, breaking it up, until no longer pink, about 6–8 minutes.

  3. 3

Stir in gochujang, soy sauce, and garlic. Cook 3–5 minutes more until the chicken is evenly coated and glossy.

  4. 4

Make the quick topping: In a bowl, combine cucumber and green onions with sesame oil and rice vinegar (if using).

  5. 5

Assemble: Spoon the gochujang chicken into lettuce cups and top with the cucumber-scallion mixture. Serve immediately.
