Ingredients

  • 300 g Ground beef (80/20)
  • 2 servings Japanese curry roux blocks
  • 1 small Onion
  • 1 medium Carrot
  • 1 medium Potatoes
  • 2 cloves Garlic(optional)
  • 1 tbsp Vegetable oil(optional)
  • 500 ml Water
  • 2 cups Cooked rice(optional)

Instructions

  1. 1

Prep (10 minutes): Dice onion, carrot, and potatoes into small bite-size pieces. Mince garlic if using.

  2. 2

Brown the beef (about 8 minutes): Heat oil in a pot over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks. Add onion and cook 2–3 minutes until softened. Stir in garlic for 30 seconds if using.

  3. 3

Simmer (about 12 minutes): Add carrot and potatoes, then pour in water. Bring to a simmer and cook until potatoes are tender, stirring occasionally.

  4. 4

Finish curry (about 5 minutes): Reduce heat to medium-low. Add curry roux a little at a time, stirring until fully melted and the curry is thick and smooth. Taste and adjust consistency with a splash of water if needed.

  5. 5

Serve: Ladle over cooked rice and serve hot.
