Ingredients

  • 2 fillets salmon fillets
  • 2 tbsp white or yellow miso paste
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp rice vinegar(optional)
  • 1 tsp sesame oil(optional)
  • 1 clove garlic(optional)
  • 1 tsp fresh ginger(optional)
  • 1 cup cooked rice (warm)
  • 2 cups baby spinach or mixed greens
  • 1 tsp neutral oil (for pan-searing)(optional)
  • 2 tbsp water(optional)
  • 1/4 tsp black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Pat salmon dry and season lightly with black pepper. In a small bowl, whisk miso paste, soy sauce, honey, and (if using) rice vinegar, sesame oil, garlic, and ginger. Add 1–2 tbsp water if you want a looser glaze.

  2. 2

Cook (15 minutes): Heat a nonstick skillet over medium-high heat and add neutral oil if pan-searing. Sear salmon 3–4 minutes per side until just cooked through (or broil 6–8 minutes, depending on thickness).

  3. 3

Glaze: During the last 1–2 minutes of cooking, brush or spoon the miso glaze over the salmon. Return to heat just until glossy and slightly caramelized.

  4. 4

Serve: Divide warm rice between plates. Top with salmon and spoon any remaining glaze over. Toss greens with a splash of water (or a drizzle of sesame oil if desired) and serve on the side.
