Ingredients
- 1 tbsp olive oil
- 3 cloves garlic
- 1 cup crushed tomatoes
- 1 can (15 oz) canned cannellini beans (drained and rinsed)
- 1/2 cup vegetable or chicken broth
- 1 tsp Italian seasoning
- 1/4 tsp salt(optional)
- 1/4 tsp black pepper(optional)
- 3/4 cup uncooked white rice
- 1 1/2 cups water (for rice)
- 1/4 cup Parmesan cheese (finely grated)
Instructions
- 1
Prep (10 minutes): Mince the garlic. Rinse and drain the beans if needed. Measure the rice, water, tomatoes, broth, and seasonings.
- 2
Cook rice (about 15 minutes): In a small pot, bring the water to a boil, add the rice, reduce to a simmer, cover, and cook until tender (about 12–15 minutes).
- 3
Make tomato-garlic beans (about 15 minutes): While the rice cooks, heat olive oil in a skillet over medium heat. Sauté garlic for 30–60 seconds until fragrant. Stir in crushed tomatoes, broth, Italian seasoning, and (if using) salt and pepper. Add beans and simmer until the sauce thickens slightly (about 10–15 minutes).
- 4
Finish and serve: Fluff the rice and stir in Parmesan (or sprinkle on top). Spoon the tomato-garlic beans over the rice and serve hot.
